    Goat Cheese and Strawberry Crostini

    If you know me, you know that I didn't try a strawberry until my senior year of college. Why? I have no idea. Growing up, I was ALWAYS a picky eater, and certain textures always bothered me. Strawberries were one of those textures. It wasn't until I created this baked goat cheese and strawberry crostini that I realized that they may be the most delicious thing to exist on this earth. Dramatic, yes, but also true.

    This crostini is the perfect sweet and savory treat. You can have it as an appetizer or a dessert, and it is perfect if you have bread lying around that is about to go stale. Plus, it is only 5 ingredients and it is so quick to come together!

    Ingredients for baked goat cheese and strawberry crostini

    • Bread
    • Olive oil
    • Goat cheese
    • Strawberries
    • Honey
    • Salt

    Method

    You do not need to be skilled in the kitchen to make this recipe, I promise you.

    Making the Crostini

    First, preheat your oven to 425 degrees Fahrenheit.

    Take your loaf of bread and slice it into ½ inch- 1 inch slices. Arrange them on a pan and drizzle 3 tablespoons of olive oil onto the bread. Make sure both sides of the bread have olive oil on them.

    Let the slices bake for 18-20 minutes, flipping the bread slices half way through. They are finished when they have browned slightly and are crunchy.

    Making the topping

    Once the bread is done, reduce the oven temperature to 400 degrees.

    Remove and discard the stem from your strawberries, then slice the strawberries in half. Put them on a roasting pan and drizzle the olive oil, honey and salt to taste and toss them. Put the goat cheese in the center of the pan.

    Bake for 20-25 minutes, tossing the strawberries half way through. When the strawberries are soft and the cheese it is golden, it is finished. Spread the goat cheese on the crostini with a knife, and top with strawberries. Enjoy!

    Ingredients
     

    Crostini

    • ½ loaf french bread sliced
    • 2-3 tbsp olive oil

    Goat Cheese/Strawberry Topping

    • 5-6 oz goat cheese log
    • 16 oz pack of strawberries
    • 3 tbsp honey
    • 1 tbsp olive oil
    • Salt, to taste

    Instructions
     

    Crostini
