Make the caramel. Set aside to cool and thicken.
In a sauce pan, melt the butter. It will start to crack & sizzle. Stir occasionally. After five minutes or so, the butter will calm down. When it does this, it is finished. Let cool.
Whisk together the flour, baking soda and salt. Set aside.
Whisk the butter, brown sugar and granulated sugar until combined. Add the egg, egg yolk and vanilla extract and mix until combined.
Add the dry ingredients and fold together until a dough forms. Cover and chill for one hour.
Roll the dough and place on a baking sheet lined with parchment paper. Bake for 10-11 minutes until edges are set and golden brown.
Once the cookies are cool, spread on a layer of caramel and top with peanuts and chocolate chips. Enjoy!
