Beat together the butter and sugar on medium-high speed until combined.
Add the egg yolks and vanilla extract and beat on medium speed until combined, scraping down the bottom and sides of the bowl if necessary.
Add the flour and salt and beat on low-medium speed until a dough forms. It will be thick. Cover the dough and refrigerate for one hour.
Roll out the dough on a lightly floured surface until it is 1/4 inch thick. Use a cookie cutter to cut the dough. Place the cut out cookies on a baking sheet lined with parchment paper.
Bake the cookies for 9-11 minutes until the edges are set and lightly golden. Let cool on the pan for 5 minutes then transfer to a cooling rack to cool completely. Enjoy!
