Baked Goat Cheese and Strawberry Crostini

Ingredients
 

Crostini

  • ½ loaf french bread sliced
  • 2-3 tbsp olive oil

Goat Cheese/Strawberry Topping

  • 5-6 oz goat cheese log
  • 16 oz pack of strawberries
  • 3 tbsp honey
  • 1 tbsp olive oil
  • Salt, to taste

Instructions

Crostini

  • Preheat oven to 425 degrees. Take your loaf of bread and slice it into ½ inch- 1 inch slices. Arrange on a pan and drizzle 3 tablespoons of olive oil onto the bread. Make sure both sides of the bread have olive oil on them. Let bake for 18-20 minutes, flipping the bread slices half way through. They are finished when they have browned slightly and are crunchy.

Goat Cheese/Strawberry Topping

  • Reduce oven temperature to 400 degrees. Remove the stem from your strawberries and slice them in half. Put them on a roasting pan and drizzle the olive oil, honey and salt to taste and toss them. Place your goat cheese in the center of the pan. Bake for 20-25 minutes, tossing the strawberries half way through. When the strawberries are soft and the cheese it is golden, it is finished. Spread the goat cheese on the crostini with a knife, and top with strawberries. Enjoy!
