These chocolate peanut butter granola bars are the perfect snack, a light breakfast, and are a great way to satisfy your sweet tooth. They have a little bit of peanut butter and honey/maple syrup to hold them together, they're loaded with chocolate chips and completed with a thin layer of chocolate on the bottom. They're addicting!
2 ½cups(210grams)old fashioned or quick cooking oats
1cup(260grams)peanut butterall-natural peanut butter works best! Creamy or chunky works.
¼cuphoney or maple syrup
1teaspoonvanilla extract
½cup(90grams)chocolate chipsI like mini!
8ozgood quality chocolate of choicefor melting
4tablespoonsvegetable oilor another neutral oil
Instructions
Line a 9x9 or 8x8 inch square pan with parchment paper making sure there is overhang on at least two sides. This will make it easier to remove the bars.
Combine the peanut butter, honey/maple syrup and vanilla extract in a medium-sized bowl. Whisk until combined.
Add the oats and mix until fully incorporated, then add the chocolate chips and fold until combined.
Evenly pack the mixture into the bottom of your pan. Use another piece of parchment paper to pack it in and flatten it out so your hands don't get all sticky. Set the pan aside.
Either over the stove or in the microwave in thirty second increments, melt the chocolate and oil together, stirring occasionally so the chocolate doesn't seize up. The oil will give the chocolate that smooth, shiny look.
Once completely melted, pour the chocolate over the bars and gently move the pan around so you get one smooth, even layer of chocolate. Place the pan in the fridge or freezer until the chocolate has completely set.
Once the chocolate has completely set, remove the pan from the fridge/freezer and use the parchment paper overhang to gently lift them out of the pan. Carefully flip them over onto a cutting board and remove the parchment paper. Slice the bars and enjoy! Store them in the fridge or freezer.
