Chocolate Covered Cookie Dough Bites (GF/V)

Ingredients
 

  • ½ cup + 2 tbsp maple syrup
  • ¾ cup almond butter or another nut-free equivalent
  • 2 tsp vanilla extract
  • 1 ½ cups oat flour
  • 1 cup chocolate chips vegan if desired
  • 227 grams chopped chocolate or chocolate chips about 2 semi-sweet bars of Ghirardelli's baking chocolate, or vegan if desired

Instructions

  • Mix together the almond butter, maple syrup and vanilla extract. Once combined, add the oat flour and mix until a sticky dough forms. Fold in the chocolate chips, and place the bowl in the refrigerator for thirty minutes to an hour to chill.
  • Once done chilling, line a baking sheet with parchment paper. Roll the dough into balls and place onto the baking sheet. If the dough got soft again, place the dough balls in the freezer for 10 minutes while melting the chocolate.
  • Melt the chocolate over the stove or in 30 second increments in the microwave. Once the chocolate is completely melted, toss the bites in the chocolate so they are completely coated. Place back on the baking sheet and let sit until the chocolate has set, either in the refrigerator or freezer. Once set, sprinkle with flaky salt and enjoy! Store in the refrigerator or freezer.
