Chocolate Cookies with Dark Chocolate Frosting

Ingredients
 

Cookie

  • 1 cup all purpose flour spooned and leveled
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • Pinch of salt
  • ½ cup unsalted butter room temperature
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • 1 egg room temperature
  • 1 tsp vanilla extract

Frosting

  • ½ cup unsalted butter room temperature
  • ½ cup + 2 tbsp powdered sugar
  • ¼ cup dutch processed (dark) cocoa powder
  • 3 tbsp heavy cream/milk

Instructions

Cookies

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper. In a bowl, whisk together the flour, cocoa powder, baking soda, baking powder and salt. Set aside. In a separate bowl, beat together the butter and both sugars on medium speed until light and fluffy, about 2 minutes. Add the egg and vanilla extract and beat on medium-high speed until combined. Scrape down the sides and bottom of the bowl if necessary. Add the dry ingredients and mix on low speed until a dough forms. Roll the dough into balls and place on baking sheet. Bake for 8-10 minutes until edges are set.

Frosting

  • While the cookies are baking/cooling, make the frosting. Beat the butter at medium-high speed until creamy, about two minutes. Add the powdered sugar and beat on medium speed until combined. Add the dark cocoa powder and mix until combined. Add the heavy cream/milk and mix until combined, starting on low speed so the milk doesn't splatter and increase to high speed. Add more milk if needed to get to desired texture. Once cookies are cool, frost and enjoy!
