Berry Galette
This berry galette is my favorite spring dessert! It is made with a flaky pie dough and a sweet berry filling. You can use any of your favorite berries in this dessert. It's just as good as your favorite berry pie, but half the work! No forming the crust and no lattices. It's so easy!

Prepare the filling
When the dough has only 10 minutes left to chill, prepare the filling. In a medium-sized bowl, toss together the berries, granulated sugar, balsamic vinegar OR lemon juice and cornstarch. Set aside.
Roll out the dough
Preheat your oven to 375 degrees Fahrenheit and let it heat up while you roll out the dough. Line a baking sheet with parchment paper and set aside.
The pie dough recipe makes two discs of dough but we only need one. You can cover and freeze the other for up to three months! Or make two galettes because why not?
Lightly flour your workspace. Using a rolling pin, gently roll out the dough, beginning in the center and rolling out in every direction, turning the dough as you go. Roll it into a 12x12 inch circle. Transfer the dough to the prepared baking sheet.
Add the filling
Spoon the berry filling into the center of the rolled out dough, then fold up the sides of the dough so that they are partially covering the berries, overlapping the dough where necessary. It does not need to be pretty (that's the beauty of a galette!).
Bake
Lightly whisk an egg, then use a pastry brush to coat the dough in egg wash. Bake the galette for 40-45 minutes, until the berry juices are bubbling and the crust is golden brown.
Let cool on the baking sheet to room temperature, or enjoy slightly warm! Top with ice cream, whipped cream, extra berries and enjoy!
