Watermelon Mojito

This watermelon mojito is incredibly refreshing - made with fresh lime juice, watermelon puree, white rum, and muddled mint, it is the perfect summer cocktail. Lightly sweetened with simple syrup and watermelon puree, this mojito has the perfect balance of sweet, tart, and refreshing.

Ingredients
 

Simple Syrup

  • 1/2 cup (120 grams) water
  • 1/2 cup (100 grams) granulated sugar

Watermelon Puree

  • 250 grams cubed watermelon, pureed to 3/4 cup watermelon puree, you may have a little left over

Watermelon Mojito

  • 10 mint leaves
  • 4 oz white rum
  • 2 oz fresh lime juice, about 1-2 limes
  • 1 oz simple syrup
  • 3 oz watermelon puree
  • 2 oz seltzer
  • ice

Simple Syrup

  • Over the stove in a small sauce pan, combine the water and sugar on medium heat until the sugar has dissolved. Set aside.

Watermelon Puree

  • Puree the watermelon, then run the mixture through a fine mesh strainer to discard the pulp. The pureed watermelon should be about 3/4 cup (180 grams). Set aside.

Watermelon Mojito

  • Add the mint to a cocktail shaker and lightly muddle.
  • Add the rum, lime juice, simple syrup, and ice. Give it a good shake then split the mixture in between two cocktail glasses filled halfway with ice. See note.
  • Add 3 oz of watermelon puree to each glass, followed by 2 oz of seltzer. Gently stir.
  • Taste and adjust! There should be a little extra of the ingredients incase you want to add more sweetness with the simple syrup, add more watermelon puree for more watermelon flavor, etc. Enjoy!

Notes

  1. If using a cocktail shaker, it comes with a built in strainer to strain out all of the bits. A cocktail shaker is not necessary, but this is something to consider if you are not using one. Before pouring into your glass after mixing, use a fine mesh strainer to get the same effect.
