Instructions
Preheat oven to 350 degrees and line a baking sheet with parchment paper. In a bowl, mix together the flour, baking soda and salt. Set aside. In a separate bowl, beat together the room temperature butter and brown sugar on medium speed until light and fluffy. Add the egg and vanilla extract and mix on medium speed until combined. Add the dry ingredients and mix on low speed until a dough forms. Add the chocolate chunks and graham cracker pieces and fold them into the dough until evenly incorporated. Roll the dough into balls, flatten them in your hand slightly, then place the marshmallow in the center and re-roll the ball around the marshmallow. Place on the prepared baking sheet and bake for 10-12 minutes until the edges are set and slightly golden. Let cool for five minutes, and enjoy!
