These chocolate covered cookie dough bites are vegan, gluten free and are delicious bites of heaven. They are coated with chocolate on the outside with creamy cookie dough insides and have minimal ingredients.
Ingredients needed for chocolate covered cookie dough bites
- Almond butter, peanut butter, or a nut-free equivalent
- Maple syrup
- Vanilla extract
- Oat flour, gluten free if desired
- Chocolate chips, vegan if desired
- Chopped chocolate or more chocolate chips for coating, vegan if desired. I love to use two bars of Ghirardelli's semi-sweet baking bars linked here.
Method
These come together so quickly and easily! We'll start by mixing together the almond butter, maple syrup and vanilla extract. Once combined, add the oat flour and mix until a sticky dough forms. Fold in the chocolate chips, and place the bowl in the refrigerator for thirty minutes to an hour.
Once done chilling, line a baking sheet with parchment paper. Roll the dough into balls and place onto the baking sheet. If the dough got soft again, place the dough balls in the freezer for 10 minutes while melting the chocolate.
Melt the chocolate over the stove or in 30 second increments in the microwave. Once the chocolate is completely melted, toss them in the chocolate so they are completely coated. Place back on the baking sheet and let sit until the chocolate has set, either in the refrigerator or freezer. Once set, sprinkle with salt and enjoy! Store in the refrigerator or freezer.

- 1 cup chocolate chips vegan if desired
- 227 grams chopped chocolate or chocolate chips about 2 semi-sweet bars of Ghirardelli's baking chocolate, or vegan if desired

I'M OBSESSED WITH THESE. I used dark chocolate chip to make these vegan and they were perfect. I'm going to try adding some chocolate protein powder next time I make these to have as a post workout snack.
